For the love of French Fries

Yesterday, I hit the gym up for a 45 minute workout. I walked/ran 2.5 miles in 30 minutes. I followed this up with 2x10 push ups from my toes, 2x25 squats, 2x25 lunges on each leg and then some abs. After much needed stretching, i went home.

On Friday, I posted my Meal Plan for the week and yesterday it was Healthy Fish & Chips.
I love me some fish and chips.
The batter, the crispiness, the tartar sauce- YUMMMM!!!

But these are not the Fish & Chips that I had. I had baked Tilapia with some pepper, paprika and lemon juice. The fish was good, but nothing to write home about.
Now the Fries......the Fries were to die for!!!
I got the recipe from OH She Glows. Let me tell you something....this girl knows her fries.  She said that 'these fries will change your life".....and I think they did.
These were Parsnip Fries with a peanut butter batter!

I followed the directions that Angela posted on her blog:

Nut Butter Crusted Parsnip Fries

Yield: 1-2 servings.
Ingredients:
  • 3 medium parsnips, peeled and cut into thin fry-like strips
  • 3 tbsp nut butter ( i actually used 2 tbsp of regular peanut butter)
  • 1 Tbsp extra virgin olive oil
  • 1/4 tsp kosher salt, or to taste
  • I added paprika and red chilli flakes
Directions: Preheat oven to 400F and line a baking sheet with parchment paper for easy clean-up. Peel and cut parsnips into fry-like strips. In a medium size bowl, mix together the nut butters, olive oil, and salt. Take parsnips and toss in bowl with your hands until fully coated. Line up on baking pan and cook at 400F for 30-50 minutes until crisp. I cooked mine for 40 minutes, but probably could have left them in another 5 minutes to crisp up even more. They were wonderful!

I did not take any pictures of them (and i regret it now) as we inhaled them wayyyyy too quick. But check out Angela's blog for the delicious pictures.

Now, when i thought about making these, i did not even know what a parsnip was. So I googled it. A parsnip is like a white carrot.


Some health benefits of parsnips include:
  • excellent source of vitamin C and fiber and folic acid
  • less calories than potatoes
  • good source of vitamin B
What do they taste like:
  • have a creamy texture
  • sweet
  • delicious
So during my french fry frenzy, i started researching other 'root vegetables' that I can turn into french fries and found so many. Stay tuned for some rutabaga and turnip fries!!!

PS. if you have never had a french fry with anything but a potato, you have to try it TODAY!!!

    I actually ate some real fries today with a cheeseburger. So good! :)

    But I may have to try this nut butter fries.
    Love parsnips. Have you ever had sweet potato fries? They are good too!

  4. I loved trying the parsnip fries. They were actually pretty tasty --even J. Alabama liked them!! Ha ha! We actually weren't huge fans of the peanut butter on them but I liked the frys. So easy to make and yummy!
